This pork shoulder is going to be smoking most of the day, while basted in a chipotle adobo, garlic, apple cider vinegar, rosemary & butter spread on top of it as it renders down! I'll also be smoking some dried chiles for a few mins before blending them with beef stock and adding to the mix.
